How Drain Interceptors Work

Drain interceptors (sometimes referred to as grease or oil interceptors, depending on their application) are essential components of commercial drainage systems. Their job is to prevent fats, oils, grease (FOG), silt, and hydrocarbons from entering the public sewer system, where they could cause blockages, environmental contamination, and legal liability.

Drain interceptors use the simple physics of gravity and water flow to remove contaminants. As wastewater enters the chamber, its flow slows down, allowing materials to separate by density:

  • Heavier solids like grit, food particles, or silt settle to the bottom.
  • Lighter substances like FOG, oils and hydrocarbons float to the top.
  • Cleaner water exits the chamber via a submerged outlet, which draws from the middle layer.

This process protects downstream pipework and stops pollutants from reaching the public sewer, watercourses, or treatment facilities. The separation process works best when interceptors are correctly sized, installed and, most critically, maintained.

Drain inteceptors are sometimes confused with grease traps, predominantly found under sinks in commercial kitchens. While grease traps are designed to prevent cooking grease from entering the drainage systems, they are limited in function and capacity, requiring regular cleaning. Both systems are necessary, working in tandem to prevent FOG from causing problems further down the line.
